Positions allocable to this class are responsible for participating in and supervising the work of subordinate cooks, food service workers, contract employees and/or inmate workers engaged in all phases of food preparation and cooking in a County facility.
Essential Job Functions
Supervises and instructs food service staff including subordinate Food Service Workers and Cooks in standard preparation and cooking techniques utilized in the preparation of a variety of food items, proper use of various kitchen utensils and equipment, portioning and serving of food items, preparation and set up of meal facilities.
Makes work assignments and inspects the work of food service staff and/or inmate workers while in progress, and upon completion, to ensure that the quality of food prepared is acceptable and meets established dietary guidelines.
Instructs food services staff and/or inmate workers in health and safety regulations and monitors compliance with those regulations.
Inspects food supplies received, rejects those supplies of poor or unacceptable quality, oversees the proper storage of supplies accepted and monitors the rotation of supplies to prevent spoilage.
Coordinates work station cooking activities with those of other kitchen units, ensuring that food items are prepared on time and that food to be served is maintained at proper temperatures.
Supervises the set up of meal facilities and oversees the serving of food in compliance with department policy and procedures and health and safety regulations.
Ensures that utensils and work areas are clean and ready for the next shift.
Requisitions food supplies based on daily/weekly menu plans, as needed/required.
Modifies recipes to meet changes in the number of servings and the substitution of recipe ingredients when other ingredients are unavailable.
Performs baking duties or work in the butcher shop, as required.
Oversees the activities of a shift, as required.
Acts as a lead person, supervising and/or instructing youth in a County-sponsored program, as required.
SELECTION REQUIREMENTS : Two years' paid journey level experience in quantity food preparation and cooking of complete meals in an institutional, commercial, military, or similar establishment.*
Physical Class III Moderate: Includes standing or walking most of the time, with bending, stooping, squatting, twisting, and reaching; includes working on irregular surfaces, occasionally lifting objects weighting over 25 pounds, and frequent lifting of 10-25 pounds.
A valid California Class C Driver License or the ability to utilize an alternative method of transportation when needed to carry out job-related essential functions.
Special Requirement Information
* Experience in fast food service is not considered as qualifying for this position.
This examination will consist of an evaluation of training and experience based on application information weighted 100%.
Candidates must achieve a passing score of 70% or higher in order to be placed on the eligible register.

SUCCESSFUL CANDIDATES MUST COMPLETE A THOROUGH BACKGROUND INVESTIGATION, INCLUDING FINGERPRINT SEARCH. Examples of disqualifying factors include: Any felony convictions; job related misdemeanor convictions; certain serious traffic convictions or patterns of traffic violations (3 moving violations in one year; failure to appear; at fault accidents; suspended license; driving under the influence); poor credit history; poor employment history; substance abuse; anyone on probation.
The eligible register resulting from this examination will be used to fill vacancies located in the Los Angeles County Sheriff's Department, Correctional Services Division, Food Services.
The names of candidates receiving a passing grade in the examination will be placed on the eligible register in the order of their score group for a period of six (6) months following the date of promulgation.
NO PERSON MAY COMPETE IN THIS EXAMINATION MORE THAN ONCE EVERY SIX (6) MONTHS.

Veterans Preference Credit: Veterans Preference Credit of 10 points will be added to the final passing grade in any open competitive examination if you are an honorably discharged veteran who served in the Armed Forces of the United States: During a declared war; or During the period April 28, 1952 through July 1, 1955; or For more than 180 consecutive days, other than for training, any part of which occurred after January 31, 1955, and before October 15, 1976; or In a campaign or expedition for which a campaign medal or expeditionary medal has been authorized and awarded.
This also applies to the spouse of such person who, while engaged in such service was wounded, disabled or crippled and thereby permanently prevented from engaging in any remunerative occupation, and also to the widow or widower of any such person who died or was killed while in such service. A DD214, Certificate of Discharge or Separation from Active Duty, or other official documents issued by the branch of service are required as verification of eligibility for Veterans preference.
